1. Pre-heat and oven to 180°c.
2. Coat the butternut squash in Major Caribbean Jerk Mari Base (1). Roast for 50mins. In a separate pan roast the seeds for 10 minutes. Chill.
3. Combine the jalapenos, olive oil, cider vingar, thyme, Major Caribbean Jerk Mari Base (2) and sugar to make a dressing.
4. Take the chilled squash and mix with the spinach, red onion, and orange. Fold in the dressing.
5. Serve garnished with the roasted squash seeds.
